Macadamia & White Chocolate Snack Recipe
• 1 1/4 cups crispy rice cereal (try to find a brand that doesn’t add sugar)
• 1 cup quick-cooking oats
• 1 cup dates (pitted)
• 1/3 cup brown rice syrup
• 1/2 cup macadamia nut butter (see recipe here)
• 1/4 cup coarsely chopped Raw Macadamia Nuts
• 1/4 cup mini white chocolate chips (or coarsely chopped large chips)
• 2 Tbsp ground flaxseed (use golden if you have it)
• 1 tsp vanilla extract
• Pinch sea salt
Coat an 8” x 8” pan with butter, margarine or cooking spray and put aside.
Pulse dates in a food processor until finely chopped and clumped. In a large bowl, stir together the dates, crispy rice, oats, macadamia nuts, flaxseed and salt.
In a small saucepan over medium heat, combine the macadamia nut butter and brown rice syrup, stirring until melted. Remove from heat, then stir in the vanilla extract.
Pour the macadamia nut butter mixture over the date/dry mixture and stir together. Stir in the white chocolate chips. Turn out the mixture into the buttered pan and pack firm.
Let cool completely, at least 1 hour, then cut into rectangular or square bars.
(Optional) Drizzle with 3 Tbsp white chocolate chips melted with 1 Tbsp milk. It’s best to let set in refrigerator for this option.
