Chocolate Banana Quinoa Bowls
Yields: 2 servings
For the Chocolate Quinoa:
½ c. uncooked Chosen Foods Organic White Quinoa
¾ c. filtered water
1 tbsp. maple syrup or honey
2 tsp. cacao powder
1 tsp. vanilla extract
pinch of sea salt
2 c. organic Greek yogurt
1 banana, sliced
3 tbsp. cacao nibs
¼ c. sliced almonds
2 tbsp. unsweetened coconut flakes
2 tbsp. Chosen Foods Chia Seeds (Item 10617)
Stir together the quinoa, filtered water, maple syrup, cacao powder, vanilla extract, and sea salt in a medium saucepan. Place over medium heat and bring to a simmer. Once simmering, cover with a lid and reduce the heat to medium low. Cook for 20-25 minutes, or until all the liquid has been absorbed. Remove from the heat and leave covered for 5-10 minutes. Remove the lid and fluff with a fork.
To assemble the bowls, first allow the Chocolate Quinoa to cool slightly. Into wide bowls, layer the Greek yogurt, Chocolate Quinoa, banana, cacao nibs, sliced almonds, coconut flakes, and chia seeds together. Best enjoyed immediately.
