Once you taste these delicious gluten-free cherry flaxseed bars, you’ll never want to be without them.
Preheat oven to 350 degrees, and coat a 9″ x 9″ square pan with coconut oil. Combine nuts, seeds, and dried fruit in a large bowl, and mix thoroughly. In a smaller bowl, whisk together egg whites, honey, cinnamon, vanilla extract, and salt.
Add the egg mixture to the dry ingredients, and mix thoroughly. Press the mixture into oiled 9″ x 9″ pan, creating an even, firmly packed layer. Bake for 15 minutes, or until nuts are toasted and fragrant. Cool completely before serving; recipe yields six bars.
