Honey Roasted Butternut Squash Recipe

As the days get darker and the weather gets colder, it is time to warm up with comfort foods that are nutritious and delicious, like butternut squash. Find it fresh at roadside farm stands, at the farmers’ market, or a friend’s garden.


  • 1 butternut squash, peeled, seeded, and chopped into 1-inch cubes
  • 3 tablespoons coconut oil (melted)
  • 1 teaspoon cinnamon
  • 2 tablespoons raw honey
  • Salt and pepper to taste (optional)


Pre-heat oven to 400 degrees. In a large bowl, toss squash in cinnamon and coconut oil until thoroughly coated. Add honey, and mix until all pieces are covered. Bake in a greased glass dish for 25-30 minutes until the squash is lightly browned. Halfway into cook time, stir to avoid pieces sticking together. Let cool and serve, and add salt and pepper if desired.
